I have mixed thoughts on the sex-change vs. tiny/unusable dick debate.
On the one hand, full gender change can just end up being guy-on-girl with extra steps. I don't even consider certain gender change doujins "feminization" because a lot of them have the guy change right away and/or might not even show what the guy looked like before changing to a girl. It's just vanilla but the girl is screaming about how she used to be a guy for some reason. Now, some of them can be hot for sure- like there's one where a playboy delinquent is changed into a girl right away but still wears the guy's uniform until eventually being found out and forced to be a cheerleader slut later on. That one was great. Also, those Chijoku An doujins where the guy gets NTR'd and is forced to be the sissy slave/girlfriend of the new guy are right up my alley. Those scenes where the guy is fucked like a girl and forced to have the child of the new guy are top-tier feminization moments imo. My favorite style is definitely this Chijoku An structure where the guy is forced to endure all sorts of humiliation until eventually getting his dick chopped off and becoming the woman of a man he used to hate. Those stories where the guy gets kicked in the balls and gets a vagina right away (while still being a man with no boobs,) are great intros to some of Chijoku's NTR stories too. I haven't seen many other artists do it this way either for some reason... (Even though it's way better than "Poof! I'm a witch and I made you a girl for revenge haha! So stupid...)
On the other hand, you lose a lot of options when the dick gets cut off. All sorts of great scenes like being forced to wear a strap-on over his dick, being locked in chastity, losing a dick-size comparison with another guy or girl and becoming their slave, being unable to get an erection, etc. etc. As far as humiliation goes, keeping the dick is superior in most ways I feel. The MC has a constant reminder that he's not a woman or man, but a failure of a man and as a human being. I think if the MC is going to become a maid, nurse, secretary, cheerleader, or some other girly job then keeping the dick is superior. A lot of gender change doujins have the guy accepting he's girl by the end of it which can completely kill the vibe and everything the story set up. If he keeps his dick then this kind of ending is much less likely. If you're going for mind break then I think either option works. Wataya's stuff is peak mind break and the guy almost always keeps his dick there for example.
One interesting genre where the guy almost always keeps his dick is age regression or specifically infantilism. Being sent back to primary school as a girl, despite being an older boy, and having all the kids and teacher treat him like a little girl is great, and the humiliation is only compounded when the other kids and/or the teacher find out he has a dick but continues to treat him like a little girl anyways. Like, his little child dick can't even be considered proof that he's a man- he's just a girl with a "little bit extra." Having the main character's family and the whole school structure/government force him to be a little girl is peak humiliation BECAUSE he has a penis. That's pretty much the only way it works and there are a lot of humiliation scenarios where that's true outside of regression/infantilism.
It all depends on what the author/artist is going for. If I were to make a "Top Ten Doujin List" there would probably be an equal mix of gender change endings and "useless dick" endings. I'm weird though because I'm more focused on the outfits than the genitals personally. I find most doujins where the characters are naked early/the whole time to be fairly unappealing regardless of which route they go.
